So why does yours taste burnt?

The coffee cherry is a fruit; the bean is the stone inside it. Almost everything you have ever tasted from it is roast — char, smoke, bitterness — because dark roasting flattens whatever happened before the roast. We seal whole cherries without oxygen for 96 hours before they are dried, and roast light, so the cup tastes of the fruit it grew in: guava, overripe peach, mulled wine.

What happened to the fruit

Every coffee is fermented. Almost none of it is controlled — and most of it is roasted dark to hide that.

A fruit, picked by hand

Ripe and unripe cherries grow on the same branch, so a person chooses, cherry by cherry. Inside each one are two seeds. Those are the beans.

Sealed, not left to the weather

On most farms the fruit ferments in open air at whatever temperature the week delivers. Our producers seal whole cherries in oxygen-free tanks for 96 hours, timed to the hour and printed on the bag.

Roasted light, to reveal

Char is a cover-up: roast anything dark enough and it tastes of the roast, not the fruit. We roast light and precise, in small rounds, sealed the same day, so what is left in the cup is guava, overripe peach, mulled wine. Nothing added.

Fermented coffee — is that new?

Every coffee on earth is fermented — it's how the fruit comes off the bean. Almost all of it happens in open air, unmeasured. Our producers run the same step in sealed, oxygen-free tanks, timed to the hour. Not a new step — controlled for once.

Whole bean or ground?

Whole bean, always. These aromatics fade within days of grinding. Any burr grinder works.

When does it ship?

We roast in small rounds and seal each bag the same day it is roasted. Orders ship within 48 hours. Free shipping over $50; a flat $7 below.

What if I don't love it?

Tell us within 30 days of delivery and we'll swap your first bag for a different lot, free — opened bag and all. Unopened bags can be returned within 14 days.
