Chapter 02 / 05 A cupping table, by post

First taste.

Before contracts, before pricing, before logistics — the cup. We send a curated tasting kit to qualified programs: two lots from the current allocation, cupping notes, brew and dose cards, and a hand-signed letter from the head roaster.

The kit is a gesture, not a giveaway. We treat it as the first chapter of the relationship — so we'd rather send fewer of them, more deliberately. Tell us a little about your program and we'll route it from there.

In the kit

  • Two lots · 50–80g of currently-allocated wholesale coffees, one signature, one rotating

  • Cupping card · A6, with the same flavour-compound vocabulary as the Educational page

  • Brew & dose card · espresso + filter starter parameters, per lot

  • Hand-signed letter · single page, on the same paper stock as our Welcome Kit

  • Trade-only mailer · stamped “For the cupping table — not for resale”

Free for named-account programs in the contiguous mainland. International or unverified inbound: kit is offered at fulfilment cost (~$15–25). One kit per business per twelve months.

Chapter 03 / 05 Six stages, one chain of custody

From green to your espresso.

Every variable that touches the cup — origin, fermentation, drying, roast, grind, extraction — is traceable to a person, an environment, a temperature curve. This is what we mean by specialty: not a label, a chain.

01

Origin

Direct relationships with named producers in Sidama, Huila, and Inza. We publish farm, altitude, varietal, and harvest year per lot.

Producer · farm · altitude
02

Fermentation

Sealed anaerobic environments. Time, temperature, and pH controlled to ±0.2°C across 72-hour cycles. The compound count we publish on Our Story isn't marketing — it's the protocol.

Sealed environment · 72h · controlled pH
03

Drying

Raised African beds, monitored daily moisture readings until target water activity. Lots that don't dry uniformly are blended down or discarded — never sold as wholesale.

Raised beds · daily aw readings
04

Roast

Calibrated curves per lot, locked once a batch is approved. Espresso and filter profiles for the same lot are roasted separately. Profiles published to partners on the dashboard.

Profile-locked · per lot · per method
05

Grind & dose

Onboarding includes a calibration session on your specific equipment — espresso, batch brew, pour-over. Updated each time we ship a new profile.

Calibrated to your bar · re-calibrated per shipment
06

Extraction

The cup as it lands on your guest's table. Sommelier-style notes for service teams, with the same vocabulary used on our retail bag — no translation required.

Service notes · matched vocabulary

Roast date, lot ID, and producer named on every wholesale bag. Reserved micro-lots flagged in your account dashboard before retail release.

Chapter 04 / 05 From application to first ship

The onboarding.

Four steps, roughly two weeks. We meet, we taste, we calibrate, we ship — in that order. No automated trial, no algorithmic pricing.

  1. 01

    Apply

Tell us about your space, menu, equipment, and expected volume. Reviewed personally — typical reply within two business days.

  2. 02

    Cupping call

Sample kit ships within 3 business days. We schedule a 20-minute cupping call with the head roaster, on your timing.

  3. 03

    Calibration

We dial profiles to your equipment and your bar. Pricing, delivery cadence, and reserved-lot access agreed in writing.

  4. 04

    First ship

Roasted to order, shipped within 48 hours. Partner login goes live with current pricing and your reserved-lot dashboard.

Chapter 05 / 05 Before you apply

Questions.

What are your minimums?

Cafés: 20 lb / month. Restaurants: 10 lb / month. Offices: 5 lb / month. Corporate gifting and private-label programs are quoted per program.

How quickly do you ship?

Roasted to order and shipped within 48 hours of roast. Weekly delivery cadence is standard; custom schedules are available for restaurants and offices.

Can I reserve specific lots or seasonal coffees?

Yes. Approved partners can reserve micro-lots and anaerobic naturals before they're released to retail. We flag upcoming releases in your account dashboard.

Do you offer training or equipment support?

Yes — a cupping onboarding and calibration session is included with every new café and restaurant partnership. Ongoing support is typically within 48 hours.

Are your coffees certified organic or fair trade?

Most of our producers hold Rainforest Alliance or USDA Organic certifications. We publish the specific certifications per lot on each product page, with farm, altitude, and processing protocol.

Apply

Tell us about your program.

We review every application personally. Approved partners get log-in access to current pricing, reserved lots, and a direct account contact — by name, by phone.

We'll reply within two business days. Applications reviewed individually.

End of brief

If you serve coffee like a course — we'd like to send you the next chapter.
