What "Reserve" means to us.
Three things have to be true before a coffee earns the Reserve mark. None of them are easy.
Microlot allocations only
Single-parcel, single-producer lots — a Cup of Excellence-winning farm and a cultivar rare enough that the lot is named after it.
Experimental ferments
Anaerobic, sealed-stainless ferments tracked at six-hour intervals across pH, brix, CO₂, and temperature.
Roasted in small batches
We roast about 20kg of green at a time — roughly 48 bags. When a batch is gone, the next one is roasted, not promised.
We turn down more lots than we accept. Reserve is what's left after every standard fell short.

Colombia Nativo Nogales
The Hernández family farm took first place in Colombia’s 2005 Cup of Excellence — the country’s most contested competition. Two decades on, they still run the lots themselves.
This one is fermented on its own mosto: the juice of the farm’s own cherries, kept from the last harvest and used to start the next — a living culture, like a sourdough starter. Before it goes in, the cherries take a 20-second thermal shock at 80°C to open the fruit. Then 96 hours sealed at a cool 18°C.
Almost nobody ferments this way. The banana, rose and candied citrus are the farm’s signature — built on purpose, not found by luck.

Colombia Papayo Jungle
The lot is named after the cultivar — that is how rare Papayo is. Very large beans, grown in small plots, sold in our importer’s exotic-cultivar programme alongside Gesha and Sidra.
The Bayters work with 250 coffee-growing families across Colombia. Papayo they grow themselves, at El Vergel. Four hours open-air on tarps to wake the fruit, then 96 hours sealed with humidity held at 22–25%.
The strawberry and mango are the variety itself, controlled — not an effect layered on top of an ordinary bean.

The next allocation.
We roast the Reserve about 20kg at a time — roughly 48 bags. We don't promise a lot before it lands: when a batch runs out, the next one gets roasted, and Reserve subscribers are allocated from it first.

How is Reserve different from your standard subscriptions?
Reserve is two bags a month of microlot or experimental-process coffees only — never the everyday origins. Every lot is allocation-limited (about 48 bags per batch) and roasted in small batches. The Single Pour and Double Shot plans use our standard origin rotation; Reserve uses the rarities.
Can I skip a delivery?
Yes — skip, swap, or pause any time from your dashboard. We don't gate or hide it.
What if I don't like the month's lot?
Your first bag is covered by the first-bag guarantee — tell us within 30 days and we’ll swap it for a different lot. After that, every month is a new lot by design; tell us what didn’t land and we’ll steer your next allocation.
Do you ship internationally?
Currently US-only. International is on the roadmap for Q1 2027.
How do I cancel?
