Sealed whole-cherry fermentation, two days. The fruit sugars round the cup: chocolate fudge, banana flambé, toffee. Cleaner, sweeter, more familiar.

96 hours

The same step, four days. Deeper fruit, a wilder finish: guava, overripe peach, mulled wine. Aromatic where the 48-hour is comforting.

Four community washing stations on the eastern slopes of Mt. Elgon, roughly 300 registered smallholders, heritage SL14 and SL28 trees at 1,400–2,000 m. Two lots, two crop years, one producer.

86 and 86.25 on arrival

Both scored by the importer's QC lab on arrival — 86 for the 48-hour, 86.25 for the 96. The scale runs to 100; 85+ is exceptional. A quarter of a point on paper, and a completely different cup.

Is it really the same coffee?

Same producer, same four community stations, same heritage SL varieties and altitude band. They are two lots — one sealed 48 hours, one sealed 96 — so the comparison is as controlled as coffee gets outside a lab.

How should I compare them?

Same grinder, same dose, same water, brewed back to back. Give both bags a week off roast first — naturals keep opening up.

Fermented coffee — is that new?

Every coffee on earth is fermented — it's how the fruit comes off the bean. Almost all of it happens in open air, unmeasured. Our producers run the same step in sealed, oxygen-free tanks, timed to the hour. Not a new step — controlled for once.

Whole bean or ground?

Whole bean, always. These aromatics fade within days of grinding. Any burr grinder works.

When does it ship?

We roast in small rounds and seal each bag the same day it is roasted. Orders ship within 48 hours. Free shipping over $50; a flat $7 below.

What if I don't love it?

Tell us within 30 days of delivery and we'll swap your first bag for a different lot, free — opened bag and all. Unopened bags can be returned within 14 days.
