What is anaerobic coffee?
Anaerobic coffee is coffee fermented in an environment with very little dissolved oxygen — usually a sealed tank, barrel or bag where the oxygen has been pushed out, often by the carbon dioxide the fermentation itself produces. The cherries sit in that low-oxygen environment for a set period before being dried.
That is the whole definition. “Anaerobic” describes an environment, not a flavour, not a technique, and not a guarantee of quality.
Sealed is not the only way to get there
A fermentation specialist measured this directly with a dissolved-oxygen meter, and the results are not what the marketing implies:

So a coffee can be anaerobic without a sealed vessel, and a sealed vessel is not automatically the reason a coffee tastes good. There is even a reasonable argument that almost all coffee is anaerobic at some point — washed coffees are commonly floated in water for 18–24 hours.
What sealing actually achieves
Here is the specific, real benefit, and it is worth understanding because it is narrower than the usual claim.
Sealing the tank removes the microbes that need oxygen to live — acetobacter and gluconobacter. Those are the organisms that produce vinegary, tart, kombucha-like notes, and they are the origin of the classic over-fermented defect.
When producers began sealing their tanks, they were eliminating the acetobacter — and their fermentations stopped tasting like vinegar.
Sealed tanks solved a real defect problem. What does not follow is that the container itself creates good flavour. Flavour comes from the variety, the temperature, the duration and — above all — which microbes are present.
How an anaerobic natural is actually made
- Pick only ripe, high-quality cherry — the better producers verify sugar content with a refractometer
- Float the cherry to separate the ripest and remove unripes
- Seal it in bags or stainless vessels with the gas displaced
- Hold until the pH reaches a target, tested daily — sometimes for as long as 8–10 days
- Dry in the skin, on raised beds or in mechanical dryers, until the moisture is right
- Dry-mill the dried skin and fruit off the seed
An anaerobic natural is a combination of two processes — the anaerobic ferment and then the natural (dry-in-the-fruit) drying. Both halves shape the cup.
Why it tastes different
Two mechanisms, and only one of them is widely understood.
The fermentation runs slower and more concentrated, so the flavours it produces are more pronounced than in a conventional ferment.
And some of what it produces survives the roast. As the microbes consume the mucilage they create byproducts. Some of those are precursors that the roast later transforms — but others are infused into the seed and pass through roasting unchanged.
Fermentation creates flavours that roasting cannot create, and can only destroy.
That is the honest mechanistic case for why these coffees are roasted lightly and restrained. It is not that a light roast is fashionable. It is that some of what you paid for is already in the seed before the roaster is switched on, and heat can only subtract it.
It is also why we roast our anaerobic lots differently from our washed Ethiopia — the same heat curve would not serve both.
Fruit is not acidity
The single most common description error, including from people who should know better.
- Fruit is aroma. You perceive it retronasally — in the nose, not the mouth.
- Acidity is a tactile sensation. A tingle, a brightness, on the tongue.
A coffee can be enormously fruity and gently acidic, or sharp and not fruity at all. When an anaerobic coffee is described as “intense,” that usually means aromatic intensity, not sourness. If a coffee tastes sour rather than fruity, that is more likely an over-ferment or an extraction problem than a feature.
The part nobody selling this coffee wants to tell you
Walk any specialty shelf and you will see the hours on the front of the bag. 72 hours. 100 hours. Five days. The number is doing the selling.
The hours are the least defensible part of the story.
The strongest fermentation voices in the field call long-duration labelling proof-of-effort marketing — it describes how much work was done, not how good the result is. The duration is not the cause of the flavour. More steps also mean more inconsistency, more waste, higher cost, and a green coffee that can be less stable in storage. And in at least one six-treatment trial, the lot with the longest microbial contact aged the worst.
There is a commercial edge to this too: these processes largely came from buyers and roasters rather than from producers, and the promised price premium has often not reached the farm.
Our own controlled pair
We can put a number on this, because we sell the experiment.
Uganda Coffee Yards gives us two lots from the same farms on Mt. Elgon, the same varietals (SL14, SL28, Nyasaland), the same altitude band (1,400–2,000 m), the same method and the same slow shade-managed drying on raised beds. The only deliberate variable is the ferment clock:

Doubling the fermentation time moved the score by a quarter of a point.
They do taste different — the 96h is deeper and more wine-like, the 48h cleaner and more caramel-toned. But different is not better, and a quarter of a point is inside the noise of any cupping table. If hours were the quality lever the industry implies, that gap would not be a rounding error.
Scores are arrival cupping figures recorded when the lots landed, not our own cupping table. We will publish our own when we have it — and if it disagrees with these, we will say so.
What to ask a roaster instead
If you want to predict what a fermented coffee will actually taste like, the hours are the wrong question. Ask:
- What was the pH target, and was it measured? — the real endpoint of a controlled ferment
- Was it inoculated, and with what? — the actual flavour lever is which microbes were working
- What was the drying temperature and duration? — this drives both flavour and how well the coffee holds
- How was the green stored? — storage conditions, more than anything in processing, decide whether a coffee is still good in nine months
We publish the answers we have for every lot, and we say so when we don’t have one.
How to brew it
Our lots are roasted light, and light-roasted naturals are less porous than a supermarket dark roast. The practical consequence: they need a finer grind, more contact time, or more agitation than you may be used to. If your cup tastes thin or sour, under-extraction is the more likely cause than a bad bag.
For espresso, rest the coffee 10–15 days after the roast date. Light roasts hold a lot of CO₂, and under pressure that dissolves into carbonic acid, which clashes with the coffee’s own brightness. Filter is more forgiving and can be brewed sooner.

Frequently asked
Is anaerobic coffee better than washed coffee?
No — it is different. Anaerobic fermentation produces more pronounced fermentation-derived flavour; a washed coffee shows more of the variety and the origin with less between you and it. We sell both from the same producer in Ethiopia precisely so you can taste that difference rather than take our word for it.
Does anaerobic mean high caffeine?
No. Fermentation is a microbial process acting on the fruit and mucilage around the seed. It does not meaningfully change caffeine content.
Does “96 hours” mean it is better than “48 hours”?
No. Duration describes how long the ferment ran, not how good it turned out. Our own same-farm pair differs by a quarter of a cupping point across a doubling of the clock.
Why does some anaerobic coffee taste like vinegar?
That is the classic over-ferment defect, driven by oxygen-loving bacteria — acetobacter and gluconobacter. Sealing the tank is what removed it. If you taste sharp vinegar, something in the ferment went further than intended.
Is anaerobic the same as carbonic maceration?
They overlap. Carbonic maceration specifically means displacing the oxygen with CO₂, a term borrowed from winemaking. Both describe a low-oxygen environment; neither describes a flavour.
How should I store it?
Sealed, at room temperature, away from light. Not the fridge. Buy in amounts you will drink within a few weeks of the roast date.
