Two roads from one cherry

Washed. Sealed. Then the same roast.

Washed

The fruit is removed before drying. What's left is the seed and the place: apricot, honeysuckle, raspberry from a lot grown at 2,300–2,400 m.

Sealed 96 hours

The same cherry, whole, in a sealed oxygen-free tank for four days before drying. The fruit's sugars become new aromatics inside the bean: papaya, strawberry wine, watermelon.

Roasted to reveal

All three roasted light and precise in small rounds, and sealed the same day. Brew them with the same recipe and taste the process, not the roast.

Asked before buying.

Why three bags?

Because one cup can't show you what a process does. The set puts the same producer's washed and sealed lots side by side, with a third reference lot. Brew them back to back and the argument makes itself.

Fermented coffee — is that new?

Every coffee on earth is fermented — it's how the fruit comes off the bean. Almost all of it happens in open air, unmeasured. Our producers run the same step in sealed, oxygen-free tanks, timed to the hour. Not a new step — controlled for once.

Whole bean or ground?

Whole bean, always. These aromatics fade within days of grinding. Any burr grinder works.

When does it ship?

We roast in small rounds and seal each bag the same day it is roasted. Orders ship within 48 hours. Free shipping over $50; a flat $7 below.

What if I don't love it?

Tell us within 30 days of delivery and we'll swap your first bag for a different lot, free — opened bag and all. Unopened bags can be returned within 14 days.
