Fermented coffee — is that new?

Every coffee on earth is fermented — it's how the fruit comes off the bean. Almost all of it happens in open air, unmeasured and unrepeatable. We run the same step in sealed, oxygen-free tanks, timed to the hour. Not a new step — controlled for once.

Why do the flavors sound like a wine list?

Starved of oxygen, fermentation builds aroma compounds ordinary processing never forms — the +42 above. Strawberry wine, rose and guava are cupping notes read from the cup, lot by lot. Nothing is added: no flavoring, no infusion. If it isn't in the cup, it doesn't go on the bag.

Is $32–45 a lot for a bag of coffee?

For a supermarket bag, yes. These are single lots from named farms — hand-picked, sealed-tank fermented, roasted in small batches. A 10 oz bag brews about 15 cups, so a $32 bag is roughly $2 a cup at home; the sets bring it under $2. The comparison isn't the grocery aisle — it's the $6 pour-over bar, with a coffee it can't serve.

Whole bean or ground?

Whole bean, always. These aromatics fade within days of grinding. Any burr grinder works.

When does it ship?

We roast in small rounds and seal each bag the same day it is roasted. Orders ship within 48 hours. Free shipping over $50; a flat $7 below.

What if I don't love it?

Tell us within 30 days of delivery and we'll swap your first bag for a different lot, free — opened bag and all. Unopened bags can be returned within 14 days. Damaged or wrong orders are replaced with a photo and your order number, no return needed.
